Wubbzy’s Super Easy Spaghetti and Meatballs

Ingredients:

1-2 lbs. spaghetti noodles (or noodle of choice)

Meatballs

1lb. ground beef

1 egg

1/4 cup breadcrumbs

1 small onion, chopped

1 clove garlic, minced

1 tablespoon chopped fresh parsley

salt and pepper, to taste

Sauce

28oz. cans of crushed tomatoes

1 1/2 tablespoons olive oil

1/4 small onion, chopped

1 clove garlic, minced

1 teaspoon oregano

2 teaspoons sugar

2 bay leaves

salt and pepper, to taste

Directions:

Meatballs

1. Preheat oven to 350° F.

2. In a saute pan, heat the oil, onions, garlic, salt, and pepper until onions are clear.     Remove from heat and let cool.

3. In a medium mixing bowl, combine onion mixture, ground beef, egg, breadcrumbs, and parsley. With hands, form mixture into medium balls and line on a baking tray.

4. Bake in the oven for 15 – 20 min. Meatballs will be done when they are slightly browned and are cooked all the way through. Be sure to turn meatballs half-way through to ensure even cooking.

Sauce

1. While the meatballs cook, bring oil in a saucepan to medium heat.

2. Add onion, garlic, salt and pepper, and cook until onions are clear.

3. Add crushed tomatoes (in juices), oregano, sugar, and bay leaves. Bring this mixture to a boil.

4. Reduce sauce to low heat. Add meatballs to the sauce when they are fully cooked. Simmer the meatballs in sauce for about 45mins, or until sauce thickens to desired consistency.

Spaghetti

1. While sauce simmers, bring a pot of water to a boil (use enough water to cover your desired amount of noodles.)

2. Once the water boils, add in pasta. Stirring occasionally, cook until noodles reach desired consistency (al dente or soft.)

3. Strain noodles. Serve with desired amount of meatballs and sauce.

4. Enjoy!

Yields: 4 – 6 servings
